(2) What dietary standards?

(a) The meals provided by the assisted living facility must be planned based on the current USDA Dietary Guidelines for Americans, 2020-2025, which are incorporated by reference and available for review at:
www.flrules.org/Gateway/referrance.asp?No=Ref-04003, and the current table of Dietary Reference Intakes established by the Food and Nutrition Board of the Institute of Medicine of the National Academies, 2019, which are incorporated by Surveyor Probe:

Review menus as necessary to determine variety of foods, including vegetables, fruits, grains, dairy, protein foods, and fat and oils. Refer to the current USDA Dietary Guidelines for Americans at
www.dietaryguidelines.gov/, for dietary pattern recommendations by age group. If the menus do not include a variety of foods and/or food groups, attempt to contact the licensed or registered nutrition professional about how the menus were planned to reflect the current USDA Dietary Guidelines for Americans and the current Dietary Reference Intakes.

Q2) Does it have to be a full commercial kitchen? Yes

Q3) Can the food be charged on an ‘A La Carte’ basis separately from the leasing? Yes

We would like to give the seniors both choices of being semi-independent (75 units) or needing assistance with memory care (25 units)

Q5) Are there any restrictions for the term of the leases? TBD

Q6) Does the restaurant need to be on a separate license? No

Q7) What are the insurance and liability requirements for both common areas and residents in their apartments? TBD in the year when ALF opens

Q8) What is the typical inspection period on an annual basis? State inspection

Q9) What are the reporting requirements to the State? None… Inspections only

Q10) Does the security and housekeeping have to be 24/7? Up to us

Q11) Staffing Requirement? “Resident to staff ratio”

For 66-75 residents, a total of 457 hours per week is required OR 11.5 Employees

For 76-85 residents, a total of 498 hours per week is required OR 12.5 Employees

For 86-95 residents, a total of 539 hours per week is required OR 13.5 Employees
